I was eating my lunch and checking out trains.
Over on the right was a cool recipe for Appalachian Irish Soda Bread.
It had no sugar, but is made with a bit of butter. Almost like buttermilk biscuits.
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 Tbs butter, broken up or softened a bit.
1 cup of raisins
1 slightly beaten egg (I used the entire egg, not egg white as shown)
3/4 cup buttermilk (room temperature)
Directions:
Mix the dry ingredients together, add the raisins and then add the egg with buttermilk. Mix it together and kneed for a few seconds.
Shape into a round on a baking pan.
Bake at 375 for about a half hour.
