I get this text message last Thursday night around 11PM.
"Have you ever made Lemon Bars?"
I answer the query in the affirmative, though I believe it may have been in the early 80's.
The phone buzzes again. I turn to my Husband and go, "Here comes the ask". He looks at me as if I am crazy. :-)
I read the message. "Can you bake some for Russ, Kelly and me?"
I answer back, yes, since I still have 9 lemons from my work friend's Meyer Lemon tree.
So, to make good on my promise, I looked for a recipe last night and this one takes an entire 6 ingredients to make. It was beyond easy.

Ingredients:
Crust
1 cup butter, softened
1/2 cup white sugar
2 cups all-purpose flour
Filling
4 eggs
1 1/2 cups white sugar
1/4 cup all-purpose flour
2 lemons, juiced
Powdered sugar to sprinkle on top of the finished bars
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. Immediately sprinkle with powdered sugar, if desired.
