I have 2 recipes that I inherited from my Mother In Law. One is definitely an old fashioned one and one is more Modern Day. The Hoop Cheese is the basic difference between the two. Hoop Cheese is very hard to come by now days and so a new way was found to make the recipe.
Noodle Pudding #1
1/2 lb noodles
3 eggs
1/2 tea salt
1/2 cup (or less) sugar
1/2 lb Hoop Cheese (one cup)
2 cups Milk
1 tea vanilla
1/4 lb butter or margarine
1/2 cup raisins
Mix all ingredients together in a bowl and then add cooked noodles and pour into a greased pan and cook in a 400 degree oven for 30 minutes, until brown.
(before baking sprinkle with cinnamon and sugar.)
Recipe #2
1/2 lb. Noodles
3 eggs
1/2 cup sugar
1 cup sour cream
1 cup cottage cheese
3/4 cup milk
1/2 cup raisins
2 tbl margarine
1 tea vanilla
Preheat oven to 350 degrees mix all ingredients together and then add to the cooked noodles. Pour into a greased pan and cover with cornflakes or cinnamon and sugar. Bake until brown about 3/4 of an hour.

Hoop cheese is difficult to find commercially in the United States, due to the difficulty of automating the manufacturing process. It was once so popular, however, that a device called a hoop cheese cutter was manufactured and used in general stores during the late 19th and early 20th centuries. This object resembled a turntable with a knife blade suspended above it. It was built by scale companies of the period to cut the exact amount of cheese the customer wanted.
A number of independently-owned restaurants in eastern North Carolina serve hoop cheese on biscuits, often accompanying a slice of pork tenderloin or fried chicken breast.
