Carrot Zucchini Bread

It all started with 3 dead bananas...

I was thinking of using them in Banana Bread and then my mind took stock of my fridge and remembered that I have an entire bag of carrots and 1 zucchini. After thinking about those bananas for a bit, I realized they were really far gone, from the incredible heat we had this week and so I counted them as a loss and tossed them into the trash. That left me with the zucchini and the carrots. So I looked up recipes for both and lucked out that I was not the only one who thought of this combination. Carrot Zucchini Bread

About This Recipe

"You can also make this an all-carrot bread by substituting the grated zucchini for an additional 1.5 cups grated carrot. To cut down on some fat, try substituting equal part unsweetened applesauce for the oil (for a little extra flavor and texture, add 2 tbsp of oil along with the applesauce). Try adding some chocolate chips, nuts, or cinnamon to taste."

Ingredients

2 eggs
1/2 cup vegetable oil
1/3 cup raisins
1/2 cup carrot, grated ( ~1/2 carrot)
1 3/4 cups zucchini, grated ( ~1 large zucchini)
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup light brown sugar

Directions

Preheat the oven to 365*. Grease an 8”x 3” loaf pan, set aside.
In a medium bowl, combine the eggs and the oil; mix well.
Add the raisins, carrots, and zucchini; mix.
Add the flour, baking powder, baking soda and salt; mix (be careful not to overmix!).
Lastly, fold in the brown sugar.
Pour the mixture into loaf pan and bake for around 55 min, or until a toothpick comes out clean.
Remove from oven and allow cooling for 5 minute.

I have not tasted the end result yet, but I did not have brown sugar, so I used regular sugar and added a half teaspoon cinnamon, a quarter teaspoon nutmeg and a quarter teaspoon of ginger, just to give it an autumn flavor. I also thought the dough was very dry and so I added a quarter cup of water to the mix. It did not need the entire baking time, either, so definitely watch it.

  1. I had it for breakfast this morning and it was excellent! The spices did add just a taste of Fall and I would do that again.
    A little butter or cream cheese...or just eat it plain. I felt so healthy afterwards. :-)
