My family is starting to wonder about me and all the baking...
My latest recipe test came from a book called Chocolate from the Cake Mix Doctor. She basically takes cake mixes and adds a few things to make them better. I happen to love angel food (ask my sister, I got an angel food cake each Birthday growing up).
She takes a basic angel food cake and then adds Dutch process cocoa and some Cinnamon to it and off you go. It sounded so easy to me, that I made it the same week I saw it.
Cinnamon-Chocolate Angel Food Cupcakes
1 box angel food cake mix
1/4 cup Dutch Process unsweetened cocoa powder
1/2 teaspoon Cinnamon
Mix the cake according to directions, add the cocoa and cinnamon and mix for 2 minutes, scraping the sides half way through.
Put into lineed muffin cups, filling 2/3rds of the way up.
Bake at 350 degrees for 15 to 18 minutes.
Touch the top of a cupcake and if it springs back, it is done.
Cool 5 minutes and then remove them from the muffin tin. Eat as is, or frost.
In an aside to my friend Gina in Belgium, yes, those are your cupcake papers.
They are much brighter then American ones and everyone here in the US thought they were very cool.
Angel, until you menrioned it, I forgot about that. Once I thought about it, you are right, enjoy the cupcakes. :-)

ooooh, they look YUMMY. yeah, i like those cupcake papers a lot because the colors radiate PARTY time lol and i figured you might find something "useful" to do with 'em.... awww, i can only imagine what they would taste like...
