My Blog Lost It's Mojo

This past week, my Blog lost it's Mojo!

I may have been late to the party regarding this, since life gets in the way.

It's been a busy week, but I finally noticed that the entire right side of the blog was missing.

No Welcome to the Jungle, no Bio, no recipes, nothing.

I have only had it for the past 17 plus years, so this was totally new to me.

I queried it on Google, and found out this is not a unique thing.

The fix?

Bring up each post separately, and find the one that has the missing right side of the blog.

So I started clicking on each blog post, and the third one back was missing the right side!

So I recreated it from stratch, even bringing the photo back from the recycle bin, and it was just fine.

I deleted the original one, and my blog got its Mojo back.

In my haste, when I wrote it, I think I deleted a small part of the HTML code on the image, and I did not replace it correctly.

Who knew it would have such an effect on my blog layout itself.

I am glad I fixed it, and I am so sorry if you were trying to access one of my recipes during that time.

Makenna Has Been Ill

The angel house has been in a mess, this Thanksgiving week.

Our cat, Makenna, stopped eating last Friday, and a call to the vet got us a Monday afternoon appointment.

The vet looks her over, and took bloodwork.

She mentioned the fact that maybe she had blockage, even though every hour or so, she went poop.

The other day, what comes out? Something that looks like a stick, though I think it is a piece of my indoor plants.

Though I did not tell my vet yet, I bet she was right about that.

Anyway, she ended up with pancreatitis, and the vet gave her a pain killer, to take for 5 days.

Of course, she spits it out if I get it in her mouth, but it seems to be doing the job. The cat is much better today.

The vet said if she did not get better in two days, to bring her in, so I am glad she is eating again.

A recheck in two weeks.

Happy Thanksgiving, (2024)

Happy Thanksgiving, to all who celebrate.

We bought a Tri Tip Roast, ahead of the High Holy Days in late September.

Unfortunately for us, our 8 day trip coincided with the beginning of the High Holy Days, so we did not make it.

About a month ago, I said to my Husband, that we would make it for Thanksgiving, and hopefully get a turkey on sale, after the holiday.

We were in the store, to buy some celery and mushrooms, so I walked by the fresh turkeys. Yep, as usual, about 45 or so dollars for a turkey.

We will see if any are left on Friday. A discount would be appreciated.

In case you do not know how to cook a Tri Tip Roast, here is what we do, courtesy of my Son.

He calls up recipes when he doesn't know how to do something, and this one was a big win, that we do each time.

Spice it, cook it in a fry pan until brown on all sides.

Let it rest for a half hour and then place on the BBQ or in the oven, until done. Yum.

Boudin Sourdough Stuffing Mix

We had bought Mrs. Cubbison's Cornbread, for our holiday.

2 Weeks ago, we were shopping in Costco, and there was Boudin Sourdough Stuffing Mix.

When we were in San Francisco, in 2020, we spent time at the Boudin Bakery on Fisherman's Wharf.

Seeing the bag of San Francisco Sourdough, brought back memories, so we bought it.

Sorry Mrs. Cubbison's, you will have to wait for another holiday.

Hundreds Of Comments. . . WTF!

Back on Sunday, I posted about our Saturday night evening at The Backwoods Inn.

I just used a photo of the two of us, and a photo of my Husband, and the coffee.

On Facebook, I posted in SCV Foodies, I group I belong to.

I used these 2 photos, and a cropped close-up of the coffee.

It was meant to remind older residents, and bring to the attention of newer residents of the SCV, that we have a good steak, seafood and BBQ restaurant that has been around since 1968.

Next thing I knew, the darn post was getting "likes" in the hundreds, and comments that just wouldn't stop.

The closest thing I ever had, to something going viral on Facebook. Well, minus a Huell post. :-)

In disgust, on Monday afternoon, I finally closed comments on the post. I left the "likes" alone, and yes, they are still coming.

Sigh...

Just outside Glenwood Springs, Colorado, Interstate I-70 was suddenly right above us on the river.

It was always in the area, but it made a difference, when this happened.

Pretty dramatic, and a different way to look at the Colorado River.

My Guy's Birthday

I decided to take my Husband to The Backwoods Inn, for his birthday.

We have been going there since 1980, so 44 years, or so.

So many restaurants closed during COVID-19, but we still have Backwoods.

He had our usual, Beef Ribs, with backwoods stuffed potato, and I had Fettuccine Alfredo, for the first time.

Both were good, and we topped it all off with Backwoods Coffee.

Something we get every time we visit this restaurant.

Dinner is not cheap, but for a once in a year occasion, it so hits the spot.

Chili: Bear Creek Darn Good Chili

Bear Creek Darn Good Chili was on the agenda this Friday evening.

Sometimes I see something in the store that looks interesting.

Last week it was pozole, that I added noodles to. It was good for 2 lunches. (If you care, Casa Verde Red Bean Pozole, Ready to eat $3.47)

This week I saw this package of dry mix. All you add is water and tomato paste.

I figured what did I have to lose, so I bought it, and added a package of day old chop meat, because I like ground beef in Chili.

I asked my Husband if I should add chopped onion, and he said "Of Course". So we did.

I finished off the last 2 tablespoons of mango salsa, and there it was, dinner for 8, at a cost of $5.42 (normal price $6.99)

Still a major easy dinner for pennies a person.

Thank you for making an easy dinner, and a change from the usual.

Pumpkin Pie - Libby's Famous Recipe

I found out that I do not have the infamous Libby's Pumpkin Pie Recipe. I use the instructions on the can.

I am using organic pumpkin this year, because it was on sale, so I had to actually look the recipe up on their website.

Moving forward, this will be on the side of the blog, for ease of finding it in the future.

Libby's Famous Pumpkin Pie Recipe

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 ounces) LIBBY'S® 100% Pure Pumpkin
1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk, (Or substitute with equal amount Lactose-Free or Almond Cooking Milk)
1 unbaked 9-inch (4-cup volume) deep-dish pie shell

Step 1

Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

Step 2

Pour into pie shell.

Step 3

Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 minutes or until knife inserted near center comes out clean.
Cool on wire rack for 2 hours.
Serve immediately or refrigerate.

The Death And Rebirth Of 33 1/3 Records

I saw this meme on Facebook the other day.

It was created by Ryan Pagelow and it made me chuckle. :-)

I hate the fact that I can not listen to CD's in my Malibu.

It only takes digital media, via a stick, or a player.

I am not in the car enough to need lots of songs, a simple CD would do the trick, for most errands.

...but enough about me and my problems.

It is nice to see that records have made a comeback. Non digital, and with much better sound, according to my friends in Dandom.

It would not surprise me at all if those very friends, were the catalyst to the resurgence of 33 1/3 records.

Crab Cakes

I bought 4 cans of crab meat, for a very reasonable price.

What to do, what to do...

All Recipes came to my rescue, with this recipe. We thought we were set.

Best Ever Crab Cakes

These crab cakes are easy to make and the best I've ever eaten! Serve with coarse mustard on the plate or your favorite mustard sauce. Submitted by LINDACHEK

Prep Time: 15 mins

Cook Time: 10 mins

Total Time: 25 min

Yield: 4 crab cakes

Ingredients

1 large egg

3 tablespoons mayonnaise

1 tablespoon minced green onions

4 teaspoons lemon juice

1 teaspoon dried tarragon

⅛ teaspoon red pepper flakes

8 ounces crabmeat

½ cup crushed buttery round crackers

1 tablespoon butter

Directions

Gather all ingredients.

Whisk egg, mayonnaise, green onions, lemon juice, tarragon, and pepper flakes together in a medium bowl.

Gently stir in crabmeat, being careful not to break up meat.

Gradually mix in cracker crumbs, adding until desired consistency is achieved.

Form crab mixture into 4 patties.

Heat butter in a skillet over medium heat. Cook patties in the skillet until golden brown, 5 to 6 minutes on each side.

Serve and enjoy!

Back to me, angel. Well, being we did not have chunks of crab meat, we had chopped crab meat, we needed more crackers. We doubled the amount, and it still wasn't enough. So if we make it again, we are definitely adding more crackers!

The other thing is add salt and pepper to taste!

Cake Mixes Shrinking

I bought a package of cake mix the other day.

I was going to make it for my Husband's birthday, coming up next weekend.

Instead, he asked for a pumpkin pie, again.

We have no desserts in the house this past weekend, so I decided to make the cake.

I read an article recently, that mentioned the fact that shrinkflation has hit the packaged cakes, hard.

They used to be 18.25 and now some are as low as 13.25. That is 5 ounces less cake mix.

Remember the days when a box mix made 24 cupcakes?

No more. Maybe 20, if you are lucky.

I buy Duncan Hines cake mix, and it is still 15.25. Still 3 ounces less, but not as bad as the others.

I am heartbroken, since I own recipes that take those box cakes as a starting point, and use them to make different recipes.

Now, the proportions are all wrong.

Just raise the friggin price, already!

Here is the finished cake. Not too bad.

This one was taken after we went through most of the rocky mountains.

Calm water, and lower hills surround it.

I can't tell you how incredible, the whole trip was.

Full Beaver Super Moon

On Friday it was the full Beaver Super Moon.

They say it is the last full moon, that will have that "super" moniker, until October of 2025.

What causes a Super Moon?

It is how close the moon is to Earth, so December's moon will be further away from us.

This photo was taken over the top of my garage, so it is not very impressive.

It seems that a planet (or star) is off to the left of the moon, which I thought was cool.

Vaccines For Winter

My Husband got a flu shot a month ago, when he saw his Doctor.

Trying to keep us on a schedule, I went to my local pharmacy, and got one 5 days after his.

I was planning on getting the COVID-19 shot a month after, which was coming up this week.

So off we went, 2 days after my 30 day wait period, and got not only the COVID-19 shot for this year, but the RSV shot.

I was not going to get the RSV, but it suddenly became more important to get it before January, so we did (no more sitting on the fence about it).

My Husband had to get a TDAP booster, since he got his last one, 10 years ago.

In good things for us, we got five 10% off groceries coupons, from our pharmacy/local store.

It is the perfect time of the year for discounts, since we always get special Holiday foods, and they are never cheap.
