Sour Cream Banana Bars with Browned Butter Frosting

I hate my friend at work!

His wife is an excellent baker and normally I don't ask him for her recipes, but this one was different.

It is not overly sweet and that is a total winner in my book. Obviously, the frosting is sweet, but you can spread it thinner, if you feel the need to cut the sugar.

Truly an awesome cake and with bananas, so that you feel it's healthy. :-)

Sour Cream Banana Bars

Ingredients

1 1/2 cups sugar
1 cup sour cream
1/2 cup butter, softened
2 eggs
1 1/2 cups bananas, mashed (about 3 large)
2 teaspoons vanilla
2 cups flour
1 teaspoon salt
1 teaspoon soda
1/2 cup chopped nuts (optional)

Brown Butter Frosting

1/2 cup butter
2 cups powdered sugar
1 teaspoon vanilla
3 tablespoons milk

Directions
PREP 15 mins
COOK 25 mins
READY IN 40 mins

Heat oven to 375°.

Grease and flour a jelly roll pan (15x10 inches).

Mix sugar, sour cream, butter, and eggs in large mixer bowl on low for 1 minute.

Beat in mashed bananas and vanilla on low for 30 seconds.

Beat in flour, salt and soda on medium for 1 minute.

Stir in nuts. Spread in pan.

Bake until light brown, 20-25 minutes. Cool.

For frosting, heat butter over medium heat until delicate brown color.

Remove from heat. Mix in powdered sugar. Beat in vanilla and milk. Mix until smooth and spreadable.

Frost cooled bars.
