Fried Artichoke Hearts



Last week I saw this box in my grocer's freezer section. I was amazed, since I had not seen artichoke hearts in a box, since I was a teen or in my early 20's.
That's a LONG time ago!

For every holiday we celebrated, my Mom would make fried artichokes and asparagus. For the artichokes she would use pancake batter and for the asparagus spears she would coat them with an egg wash and then bread crumbs. Not the most healthy way to make them, but hey, it did hide some vegetables and got us to eat them. :-)



Sunday I decided that I would try to make them myself.
So for the entire package of artichoke hearts, I used a half cup of pancake mix and a half cup of water. I use buttermilk complete by Aunt Jemima. Put each artichoke heart into the pan with a little bit of the batter and fry on each side for a few minutes. I didn't even defrost the artichoke hearts and they still came out just fine. But do whatever you want.
To say the least (minus my husband who is not a big artichoke fan), they were a big hit. My son and brother in law dipped them into blue cheese dressing. I ate them plain. It was truly just as I remembered it.

  2. It always surprises me when something like that comes up in my mind. I have no idea where Mom got the idea to make these, but they truly were a staple of our holiday feast growing up.
