I got most of the recipe from THIS blog post. My only problem was I did not really get times from this recipe and an oven temperature. So I found them on THIS site.
So between the two, I managed to make almost flawless radish chips. Yay me!
Here is the recipe.
Crispy Baked Daikon Radish Chips
3 Tbl Olive Oil
Salt and Pepper to taste
Paprika to taste
Heat oven to 375 degrees
Peel and thinly slice the Daikon Radish. I used a mandoline, that I bought recently. I set the slicer on the smallest setting, though maybe I should have increased the width of the slices a little.
Add the three ingredients to the thinly sliced radish. Mix with your hands and then lay them onto a cookie pan, like this.
Place in the oven and cook for 10 minutes.
Take out pan and flip over the radishes and cook another 10 minutes until they look done.
Mine had a tendency to not crisp up enough, though they did get a bit better, when sitting for a few minutes.
Note: Later, they got soggy again.
As I may have mentioned, they disappeared about a half hour after dinner was over. My son snacked on the ones that were cooking, while we ate dinner. It took quite a while to make them all, by the way. Maybe 5 or six pans of radish.
It is better if you share the oven with something else, like my chicken that I had cooking. It then feels like you are not using all that energy for a radish. :-)
