Chicken Cacciatore

My Mom made chicken cacciatore quite often. I think that I have made it exactly once or twice.

The main reason why I don't make it: My Husband hates it.

This Valentine's Day we had heart shaped ravioli for dinner and so since I had to make sauce and I had a chicken to make, I decided to go for it.

We had 2 lovely NY Strip Steaks, so I knew my Husband was covered in regard to meat.

I made a cauliflower casserole, and so the meal was complete.

We are learning that if you want to cook something in the crock pot, you might like to brown it first in a fry pan.

So that is what I did. dredge the chicken in flour and fry all sides to get rid of the chicken fat.

I put salt, pepper and Italian spices into the flour mixture, to give it some flavor and to thicken the sauce in the pot.

I probably should have added a bit more flour, because it came out watery, as usual.

It did not take much time to cook on high, maybe 3 hours total.

It came out fall apart good.

Chicken Cacciatore

1 three lb chicken

1/3 cup flour and spices to your taste.

Wash the chicken and dredge in the flour. Immediately place in a hot frying pan with oil.

Cook all sides and remove to the slow cooker.

In the slow cooker put in an onion and garlic to taste.

More Italian spices, if you want.

1 can of diced tomatoes.

1/2 package of mushrooms.

Cover and cook on high maybe 3 hours.

Enjoy.
